1 ea. whole wheat bread
2 oz. egg white
¼ tsp. NutriFit French Riviera Salt Free Spice Blend (For each teaspoon of the French Riviera blend you may substitute: 1/4 tsp. each summer savory, tarragon, basil and fennel seed.)
1 small tomato, thinly sliced
1 tsp. goat cheese
¼ cup fresh spinach, well washed and ribs removed
Cut a 2" hole in the middle of the slice of bread. Save for another use. Toast bread lightly.
In a nonstick skillet, cook egg white with Riviera blend until thoroughly cooked. Set on top of the toast. Wilt spinach in same skillet for 1 minute.
Set egg into hole in bread. Top with 4 thin tomato slices, fanned out like a flower. In center of tomato, mound the spinach and top with the goat cheese.
